i would like to be able to set the speed up on my new ram from 2133mhz to 3600 like it can handle, but cant find any place to do it

Unfortunately, the fastest any RAM will ever run on an OMEN By HP 875-1000 Obelisk Desktop PC (3VH40AV) is 2666 MHz.  You can see that, for example, in this UserBenchMark "HP System OMEN by HP Obelisk Desktop 875-1xxx" User link: UserBenchmark: HP OMEN by HP Obelisk Desktop 875-1xxx Compatible Components.

 

What you are experiencing is that certain RAM -mostly 'fancy' so-called gaming RAM such as Corsair Vengeance, is getting stuck at its default ("SPD") speed, such as at 2133 or 2400 MHz:

Solution: return this RAM and get RAM (Crucial, etc.) that will actually run at 2666 MHz.
