I was wondering if it is at all possible to upgrade my storage on my OMEN by HP Gaming Laptop 16z-n000? I have a 1TB currently from purchase and was wondering how high of a storage I can go to when adding another one and which ones are compatible, if I can even upgrade my storage.

Chapter 1 of the maintenance and service guide lists the drive capacities HP offered in the model series.
That is normally just what HP offered in the model series, not the maximum capacity supported.
However, no one can tell you exactly how large a capacity SSD you can install because there is no software that I know of that is available to provide that information.
Theoretically, the sky's the limit as long as you install a single-sided SSD.
The Crucial SSD report for your notebook indicates that they sell NVMe SSD's up to 4 TB in storage capacity.
