How do you adjust the resolution for scanning photographs on the HP Color LaserJet Pro MFP M476dw?

Under Properties/General, it shows that it has a Maximum resolution: 600dpi.

When scanning small old pictures, how can I ensure that it scans at 600 dpi, rather than 300dpi or something less?

Hi,

Please make sure that the scan source is set as Flatbed Glass and not as Automatic Document Feeder in the HP scanning software, then higher scan resolutions should become available.

If you are using the HP desktop scanning software you can create a custom scan profile with the settings you want and save it for use when you need it. Note that some HP models are capable of 1200 dpi scanning but you must Windows Scan or 3rd party scan software that can use a Windows WIA driver and not the HP twain driver.
