I am trying to connect a HP LasetJet 2100M printer (with a serial port ) to my HP Envy. I bought a  USB to 25 Pin Parallel Printer Cable Adapter Converter and it appears that my HP is recognizing the printer, I have the drivers installed, but when I try printing it always fails.  What am I missing?

Check to see in the printer property if the connected is USB001 002 003 ..... or not.

If you find it's LPT1 then change it to USB00x and it should be fine.

If it still doesn't work work maybe you got a bad  USB to 25 Pin cable which one is gone bad easily.

Another way to connect HP 2100m to your PC is adding a JetDirect (600N,610N,615N) to 2100m and make it into a network printer it will be easier.

Thanks. My printer WAS  connected to LPT1 and I switched it to USB001.  When I tried a test print, the light on the printer did start blinking, so I know that some communication is going on, but nothing else happens and after a bit  I get the failure error.  

I probably should have included this information in my original post -  when I bought the cable and first tried it, my very first trial (print of a small email) worked  fine. But after that, nothing ever worked. Don't know if that's another clue.   I guess I will try a new cable at this point.Thanks for your help!

If you find out that the USB-LPT cable is not stable or not work don't buy another one because most of them on the market are not reliable. Find an JetDirect on eBay is more realistic and cheaper perheaps. HP 610N is better for 2100m.
