I was wondering if it is possible to change the Touch Control to convert from a Group 500 to a HDX system???

PTC hardware is universal for both RPG and PTC. It's enough to install the right PTC S/W version corresponding with the version of your endpoint S/W. For PTC version number you need to install please refer to EP Release Notes.
