Running Windows 10, version 20H2 OS build 19042.630 . Realtek Audio does not recognize that a device is plugged in, therefore, I can't record. The jack works as a headphone/playback jack, but doesn't seem to understand that a sound source has been plugged in.

The headphones/microphone combo port is designed for headsets. It is NOT a line in and in many cases it won't support a standalone microphone directly. I heard users use a Y adapter to split but I have not tested that. One example
