Operating System: Microsoft Windows 10 (64-bit)

I own the HP Envy x360.  I would like to order headphones to listen to meetings etc but don't know the particulars on headset plug etc. Can anyone help?

For meetings, you probably need a headset. There are many around including from HP:

It depends on how mobile you want to be. 

You have a better bet with the microphone quality with a wired headset through either USB or 3.5mm audio port. But your mobility is limited to the length of the wire. 

If you like to walk arround during audio conference calls, you can consider bluetooth headphones.  The ones you used for your phone should work just fine.
