Hello,
I am trying to install Windows 10 Professional from an all W10 versions USB stick onto a new HDD.
When I boot from the USB it's not given me the Windows 10 options to install Professional. It only installs what is already on my HP laptop which is Windows 10 Home.
Is there something I need to do in Bios to change this so the options come up?

As long as you have a valid Windows 10 Pro license key, you can change your product key when booted into your Windows 10 Home HDD - Settings > System > About > Change product key or upgrade your edition of Windows...
Windows 10 Home will then proceed to "upgrade" itself to Windows 10 Pro, and you'll be prompted to reboot once it has completed. This is much easier and quicker than fully reinstalling Windows 10.
If you're looking to install Windows 10 Pro onto a brand new, formatted HDD, I would recommend formatting the existing HDD that has Windows 10 Home installed on it (unless you need it there for some reason). Either way, once you enter your valid Windows 10 Pro product key, your edition of Windows 10 will be the "Pro" version once you reboot.
