I want to fresh install Windows 8.1 home edition from recovery DVD's that I have created, on a new SSD, that I want to replace. Will it ask for my Windows product key/ID. If yes where can I get them. I now have Windows 10 Home edition running on HDD in my laptop

Hi:
You shouldn't need the product key to reinstall W8.1.
The product key is in your notebook's BIOS.
If you want to view and print out the W8.1 product key and the version of W8.1 the key is good for, install and run the free Showkey Plus app from the Microsoft Store.
