Hi,
My notebook is fresh out of the box and is updated to the latest BIOS, drivers and Windows 10 updates.
When the notebook enters sleep mode (either by timing out or when I close the screen), when I wake it, all open apps have closed and have to be restarted (on restart, they all display their own version of the message saying this programme shut down unexpectedly indicating they've been force closed). It's really annoying so I'd be grateful for any tips or help. Whilst I obviously will reset the device if it is something more serious than me being an idiot and not clicking the right power management setting (I've checked and can't see anything obvious), I'd prefer not to as it's a brand new device and I've only just done the initial setup!
I'm only running the standard bundled software plus I've installed Adobe Creative Cloud and a selection of CC apps. The only thing I have plugged into the device is the dongle for an HP wireless mouse.

Windows 10 laptops come with a new feature enabled by default -- Fast Startup -- which is a new form of hybrid sleep/hibernation, which has been shown to cause issues like those you are reporting.
I would follow the instructions below to disable it -- to see if that helps:
Fast Startup is supposed to dramatically speed up the booting process, but in some PCs, it actually slows it down or causes it to hang. It's also a new form of hibernation known as hybrid sleep -- and this causes battery drain to maintain the state of the PC while turned off. In some rare cases, it can also cause a laptop to overheat because the processor is still running and still generating heat, as this has been reported when the laptop was turned off and put inside a case.
Disabling Fast Startup might fix booting and shutdown problems.
There are two ways to disable FastStartup in Win10: (1) through the Control Panel, and (2) through an elevated command prompt.
Control Panel - Open Control Panel --> Power Options.
Select "Choose what the power buttons do"
Select "Change settings that are currently unavailable"
At the bottom of the Window, under Shutdown settings, uncheck the box regarding fast startup
Elevated command prompt - run the following command:
REG ADD "HKLM\SYSTEM\CurrentControlSet\Control\Session Manager\Power" /V HiberbootEnabled /T REG_dWORD /D 0 /F
In both cases, reboot Windows.
NOW, Fast Startup is disabled.
