I have just bought a laptop with Windows 11 in s mode. I am thinking of returning it as I can't download the apps that I want to. I know I can turn off the s mode, but I am scared that the laptop may not run well afterwards.
Would it affect t it negatively or is that just a myrh? No wonder it was cheap!

Welcome to the HP User Community.
Yes, because the Windows is so limited, the computer is a little less expensive.
A primary reason for the smaller price point: Because if you cannot run any actual software on the computer, the hardware does not have to be much of a computer to run applications and (usually) all your documents and document software in the cloud. You need some decent graphics, a good internet connection, and a little disk room to store the basics.
Meh - I'd not have one.
That said, I'm old and I have the means to purchase what I want.
"Real" laptops, those machines that do what you want -- and particularly those computers that do pretty much whatever you want -- are not cheap.
Might be worth it to check into a better grade machine --
OR
If the hardware is already decent, and the disk is large enough (say 512 GB), then switching to regular Windows and loading a bunch of software, games, and pictures on the computer will be fine.
Get some more information and decide what you can do from there...

People are saying it’s a really nice laptop in reviews, I do a lot of Vinted, and I can’t get that as an app and there are a few other things I’d like. I am just afraid to switch off a mode right now because I don’t want to be regretting it. Still don’t know wether to return it. But most laptops I can afford seem to be Windows 10 or 11 in s mode.

"Really nice" means the computer is useful to those who recommend it. This is positive news, of course.
If you return the computer and try to buy something you can't afford, that's a different kind of regret.
Laptops are more expensive than desktops because all the electronics have to fit in a small case - that is a bit of an oversimplification, of course - but the technology used to build a laptop is complicated. Lots of people want a computer they can carry around with them - the companies that make laptops can charge more because people want the product.
Find out what the "Vinted" application or software requires - Most software websites include a "Requirements" section so you can check that your device can run the application.
There are thousands of computers - we never did hear about which model you have.
