I want to save to hard drive but all goes to one note and then I can't access document or photos etc.  How do I set up my own folders on and save to hrd drive?  Also how do I delete apps for music etc. as I don't want these.

Type "save to" in the search area and you should see an entry for Default Save Locations. Select that and a window will open listing alternate save locations.  You can change the defaults there.
