Does anyone know how to remove a printer from the devices list on HP Support Assistance? there is no simple option to do it, either the HP developers are stupid or they wanScreenshot_HP Support assistance.jpgt to waste people's time.

I can see your problem.  You need to either create an account, or if you have one, sign in.  Then you will see your account name on the top bar - go to it and select Profile.  Your profile amongst other things will show you the devices that you have currently on HP Support Assistant (whether on warranty or not).  You will see a checkbox with an x in the top right corner of each listed device, simply uncheck the box to delete that device from Support Assistant.
