Is the ZOOM app incompatible with S Mode Windows 11?

Sure, ZOOM might be incompatible with Microsoft S-Mode --

S-Mode only allows apps to be installed from the Microsoft Store

Next, it's possible that not all apps in the Store run in the limited Operating System that is "S-Mode".

Check with Zoom Support -

See if you can find what their support says about where / how you can run their application.
