I had two monitors plugged into my USB-C port via a USB-C to dual HDMI splitter - I was able to have three separate displays (including the laptop screen). All of a sudden I am no longer able to extend my display, I have tried all driver updates, BIOS updates, and even monitor updates, but still I cannot get my screens to extend through USB-C. There are no issues plugging each monitor individually into the HDMI port.
When I plug the splitter into the USB-C and go to the Intel Graphics Command Centre, I am unable to 'enable' the monitors but the laptop does detect them both. The windows display settings screen also says that both displays aren't active.
Very odd as they worked perfectly fine one day, and stopped working the next.

Sorry I have to say: I don't believe you, what did you actually get with the splitter ? What is your HP Pavilion x360 14 Convertible PC 14-dy0000 (23S36AV) machine ? It could be one of the following machines:
For example: HP Pavilion x360 Convertible 14-dy0016na
You should be able to connect to 2 external monitors using
Monitor 1: Using a direct HDMI cable (one only)
Monitor 2: Using compatible USB-C moninotr or USB-C to DP monitor (you may be able to use USB-C to HDMI too)
You may be able to daisy chain 2 compatible monitors using USB-C port using the following Guide
