Elitebook G5
Microsoft Windows 10 (64-bit)

I moved from an Elitebook 8440p with docking station and dual HP 25f monitors to an Elitebook 845 G5 with HP USB-C Dock G5 and want to use the dual monitors.  How to connect the dual monitors to the USB-C Dock G5?

I can't find and HP 845 G5 to check but I believe your HP 845 G5 is similar to my 840 G5, except my machine uses Intel CPU and yours uses AMD CPU.

 

I'm using USB-C Gen 5 dock with my machine right now and tested both with 3 FHD external monitors (I don't have 4K monitors to test and not willing to buy one now until one of my 5 FHD monitors breaks). HP 840 G5 and USB-C Gen 5 are true mates for single cable solution.

 

You can simply connect USB-C cable from the dock to your machine. You don't need to power your machine up, power the dock will also power your machine (and shut down your machine also shut down the dock).

 

The dock has 3 video out ports, 1 HDMI port and 2 DP ports. Since both your monitors are FHD, you can connect 2 monitors to any 2 ports on the dock and up you go.  You can setup extend display from there.
