I have the AMD Ratheon Graphics Card and I've read it is capable of Multiple monitors, I just can't figure out how to do it. I have one Monitor coming out from the 1 HDMI jack on the laptop...what am I missing?

What is your HP 15.6 inch Laptop PC 15-e2000 (2J4V7AV) machine ? It could be one of more than 20 machines on the following link
https://support.hp.com/au-en/product/product-specs/hp-15.6-inch-laptop-pc-15-e2000/model/2100376548
For example : HP Laptop 15-ef1001wm
It ONLY has 1 SuperSpeed USB Type-C® 5Gbps signaling rate port which does NOT support Alt mode nor Power Delivery. You can NOT use it to
- Charge your machine,
- Connect to an external monitor with/without hub/dock/adapter (some hubs may have builtin chip to support this)
If you wish to connect 2 external monitors (only-total 3), you can use
- Monitor 1: HDMI direct cable,
- Monitor 2: Using a Displaylink Certified USB-A to HDMI adapter such as
