I have pretty much the same problem with the same Qualcomm adapter and Windows 11 on my ThinkPad.
Playing bluetooth audio works just fine as long as you don't want to use the microphone.
Then comes this metallic stuttering - for some reason, both from the BT headset and from the integrated laptop speakers.
The microphone doesn't start at all, or cuts after a few seconds.
Tested two BT headsets that had worked well with my old laptop and my iPhone.
I also reinstalled Windows, updated BT drivers, tweaked I don't know how many registry settings there and back but nothing helps.
I did a brief test with Kubuntu live (which was indeed just a couple of minutes) and didn't encounter this issue. It looks like some Windows-Qualcomm thing.
I've ordered an USB Bluetooth adapter to see if that helps. I'll update the post if i find anything useful.

Just to add to what I said before, a USB Bluetooth adapter works perfectly. So, the problem seems to be with how Windows 11 and the Qualcomm 6900 BT Adapter are communicating, probably the driver. I even tried switching to a generic Windows driver (Generic Bluetooth Adapter), but the same issues popped up.
