Product: HP Spectre x360 - 13t-aw000 CTO

I am struggling to determine how to configure esim on my HP Spectre x360 - 13t-aw000 CTO laptop.  Currently the status says insert SIM.  It used to say connect with a data plan and it looked straight forward.  Now it shows a selection of SIM 1 and SIM 2 and when I select either one it says Insert SIM.  It is almost like it no longer sees the Esim like it used to.  Any ideas?

 

Also, anyone know if (once I get the option back to connect with a data plan) if the providers are limited to those show on the screen or do Verizon or like Mint mobile offer this?
