MediaTek MT7921 wifi adapter keeps disappearing in an HP Envy 17-ch2071cI laptop (2 yrs + 3 mos. old). Windows 11 Home v23H2.
Seems like a flaky adapter make/model based on what I see online. If I boot into the BIOS, surf around in there, then reboot the laptop, the WiFi Adapter comes back to life. Updating the BIOS doesn't seem to help. Has happened 3X.
Try updating the driver to no avail, get the BEST DRIVER IS ALREADY INSTALLED M$ msg.

I don't know what driver version you have installed but below are the links to the latest Wi-Fi and Bluetooth drivers HP has for that model Wi-Fi adapter:

Current WiFi driver is 3.0.xxxx, (it's a customer's machine, don't have the exact existing driver version number), but the current WiFi driver on HPs site is 3.4.1244.540 , yes.
Tried installing that new driver to no avail (I get the classic annoying Microsoft message, ....existing driver is the best driver installed. Under administrator account, with BitLocker disabled). I don't think a newer driver is going to help this thing, I think it's a flakey , cheap adapter.

Yes, the MediaTek and Realtek cards are not the best ones out there.
You may want to see if removing the MediaTek card and installing the Intel AX210 Wi-Fi card works better.
