My chromebook continually turns off WiFi and will not list available networks for me to connect to.

What is your machine ? Probably it only supports 2.4 GHz networks. You need to allow your router to broadcast DUAL bands which are 2.4GHz and 5.0GHz, your machine will "see" 2.4GHz network and allow you to connect.
