On this laptop my adapter I am learning is 10/100 (Realtek PCIe FE). I have read on here to get a USB 3.0 to RJ45 adapter, when I plug it in do I or should I disable the adapter?

No, no need to disable the old one, just do not plug LAN cable to the old one.
