What's your CPU/GPU temperature?
Is it still shutting down automatically?
And yes, you should ALWAYS use thermal grease, and replace old thermal grease EVERY time you remove the heatsink, without fail. If you don't, you run the risk of permanent damage.

180F is 82C.
Most laptops won't shut down at 82C, but nevertheless, this is an extremely high temperature, and it should make the fan spin at maximum.
This could be
1> A loose cable. Since you have re-assembled the computer, it's likely a cable is loose inside. If you have the required tools, patience, and expertise, I'd suggest take the laptop apart and re-assemble it once more. It's not just the fan cable that matters, some other cable might trigger this problem as well - i once had an issue where a flex connector near the touchpad was loose, and the fan would spin at maximum speed, then the notebook would shut down. Turning it back on would display a message saying that the notebook was shut down to prevent heat damage, but the noteboot was not heating up at all. I connected the cable properly (this required a full tear-down lol), and the computer has never done this again, it's been 6 months.
2>If step 1 fails, it's likely that the fan itself has failed. Replace the fan.
But something tells me it's not the fan, as this behavior started after you opened up the computer, strongly suggesting a loose cable.
