Sorry, but resetting your laptop reset Windows Update.
I recently had to do this to one of my PCs and it took three full days (!!) for the Windows Update process to finish. One day to find the updates, one day to download them, and one day to apply them.
To add to the frustration, during the downloads, the progress "froze" at zero percent!
So, I though it had got stuck -- but it had not -- and this is important! Go into C:\Windows\Distribution. If there are files and folders there, Windows Update is working, it's just not updating the status info.
You can check that periodically, and while its still downloading, it will keep growing. As long as there are files and folders there DO NOT turn off your PC! This will only force it to start over when you restart.
Sorry ... but you just have to leave it on and it will take its course.

Did some more research and found out I need to upgrade to Windows 8.1 to receive updates..but when I tried to upgrade, it freaking told me to get updated from Windows Update! I'm going round in circles once again 😞

Have you tried looking into the settings for system restore.
In fresh installations of Windows, the standard stetting is for Windows to create a recovery point before installing new software or updates. This significantly slows down the update process, but it does add some recovery resolution if an update or installation fails. Modern updates and software installs (in my experience), rarely fail though, and creating restore points should not be necessary. If you have always done updates/software install with restore points set on, this should not yield unexpected lengthy update procedures other than more reasonable assumptions like: Lagging internet; Larger updates; Newer version of Windows; And perhaps other issue i forget here.
