Good Evening,
I have factory reset my printer and also wifi reset it as it used to be connected to an old wifi. When I try connect it to my new wifi after having reset it multiple times, it won't connect. I use the HP app on my laptop (mac) and it stays on wifi diagnostics for ages then fails to connect and tells me there is an error. The screen on my printer read "0", whatever that means. Please help as I really need this working for Uni.

Verify that the printer is correctly connected to your wifi.
If your printer is connected to the same wifi as your PC, then type the IP address from the configuration page in your PC browser address bar, and accept any security warnings. You should enter the printers embedded webserver:
Check connection status and for messages especially under network and settings.
You can also try to enable Wi-Fi Direct and connect your PC to the printers wifi server for printing.

My printer just prints blank pages when I try print the configuration page despite it having ink in it. I've tried connecting it to the wifi multiple times and am getting to the point that I may just opt for a canon printer because I've never had these problems with canon before. HP have really dissapointed me and I wouldn't recommend their printers to anyone.

I am not a HP supporter but I understand you are in a stressed situation. Setup the printer correctly will definitely be much faster than buying a new one.
It is important that you understand that after a full reset the only way you can connect to the printer for further set up is to use the printer's built in wifi server. This actually means your PC or Phone needs to temporarily drop it's connection to your ordinary wifi hotspot to use the one of your printer. Please close all other apps when you are doing the setup.
If still no lock take a screenshot of the point where the setup fails and tell if you manage to make the printer enter the blinking state at 0:40 in this video: HP Deskjet 2700 WiFi SetUp, Connect to WiFi Network of Home or Office !! - Bing video

You actually are connected to the printer. That is nice. Something works.
I assume you have typed the password of your new wifi, but the printer cannot connect to this wifi.
According to 4AA7-7916EEAP.pdf (hp.com)
your printer has very limited wifi capabilities:
Make sure your new wifi accepts a connection using 802.11n or else your printer cannot connect.
Even you should be able to using dual band try to enable 2,4GHz in your wifi. 5,0GHz usually requires 802.11ac which your printer apperantly do not support.
Most likely you can setup your wifi by entering the IP address of the default gateway on your wifi in your browser's address bar. This is typical 192.168.1.1 or 10.0.0.1
Also make sure your printer is close enough to the wifi box - preferably in the same room.
For a fast work-around consider to connect to the printer using a USB cable.
If you can open your print job on your phone/ipad you can also print using a bluetooth connection which is slower but much more simple to setup.

My printer doesn't have a USB slot to connect my laptop to and it's still not connecting to my wifi when set at 2.4Ghz. I've looked all over the printer and there's only a plugin slot for the power of my printer.

USB-Support:
If you at this page select "Product specifications" in the drop down:
support for 2700
then you should be able to find exactly your printer model. (If you know the serial number you can also use it here: https://support.hp.com/us-en)
Then in the section "connectivity" of the appropriate model you can read whether your printer supports USB.
All models I checked do support USB.
At 0:25 in this video the USB cable is connected to the upper left rear corner when you are facing the front of the printer.

Your Macbook Pro is an excellent tool for investigating wifi troubles:
Read the section "Using the System Information Utility" of OSX guide
(Quick: You can also click the wifi icon while holding down the option key)
Pay attention to PHY (technology) and to Channel (5GHz)
Even you earlier did not have success in printing a test page, I think you should give it a try.
