I'll be happy to help you resolve this issue. So I need your help to provide the following:
1. What is your OS version?
2. What applications you use to print (e.g. MS application, Adobe, 3rd party software etc.)?

Hi dharrison1,
There was HP Print for Chrome apps from the store that has option for mutiple copies.
Watch this example on how to use it:
Chromebook: Printing using HP Print apps
