After several months of flawless printing.. I've all of a sudden reached an all out failure.
The printer will print about two inches worth of work onto the paper before hanging, to eventually "Print Canceled."
This occurs via Windows10, OSX Sierra and via HP Eprint.
All software/firmware is up to date.
Printer is plugged into a wall outlet.
Rebooted multiple times, reinstalled software, etc.
Suggestions?

I would like to take a moment and thank you for using this forum, it is a great place to find answers.
As I understand the HP Envy7640 is automatically canceling prints after it prints half way,
No worries, as I'll be glad to help you, that said, I'll need a few more details to dissect your concern & provide an accurate solution:
Have you attempted to reset the printing system? if not, try this link: Click here
Did you add or change the cartridges recently?
While you respond to that, here's a few things you can try:
I suggest you print a test page or a diagnostic page to identify the issue: Click here (Skip to Step /Solution 7)
If that doesn't print either, the best way to identify the issue is by using the copier to check if the printer works as a stand alone,
If it does, you may need to perform a semi-full reset of the printer to start fresh,
If it doesn't work as a stand alone either, you may have a hardware malfunction.

The printer receives communications from all sources - so resetting information clientside isn't necessary (although, for safe measure, it was attempted).
The printer has no problem printing test pages/alignments/etc.
It also is able to print copies locally from both the scanner plate and the tray feed.
As stated originally, I've already given this printer a full factory reset.
This has been tested from OSX, Windows, ePrint and NFC.
All fail to print 2-5 seconds into the job, the paper queues up, prints about two inches then hangs.

Going by what you've mentioned so far, I recommend you Contact HP to either repair or replace the printer,
Please use the following link to create yourself a case number, then call and it may help speed up the call process:
Step 1. Open link: www.hp.com/contacthp/
Step 2. Enter Product number or select to auto detect
Step 3. Scroll down to "Still need help? Complete the form to select your contact options"
Step 4. Scroll down and click: HP contact options - click on Get phone number to obtain a case along with the phone number.
They will be happy to assist you immediately.

I purchased this back in Oct of 2015 from Amazon.
Payed a decent penny.. and it's BARELY used.
I'm a "Spend more to spend less" kind of person, so I'm not exactly impressed with the Cost : Use ratio.
No disrespect, but I don't think I can wisely invest more money into the device.
Is this something that is covered on HP's behalf?

If the printer is covered by an extended warranty plan that you may have purchased in the past,
It would be free of cost, nevertheless, I recommend you give them a call and they'll notify you of any offers available.
