How do I scan a color document into black & white?

As I Understand you need help with printing a color document in black & white,

To clarify, have you attempted to make use of the grayscale options for printing in black & white?

If you haven't done it yet, please try the below steps:

 

hidden in the depths of Preview printing options.
Select Paper Type/Quality and it's under 'Color Options':
 

(As shown in the below image):

Thanks, but no, I am not trying to print in black & white.  The original document is color.  I want to set up the scan so that the scanned result is in black & white.
