Was using old version of HP all-in-one software. Using page feeder to scan double sided documents, I'd scan side 1, then turn pages and scan side 2 - output was page1, 2, 3, 4 etc. With new HP Smart App I can't figure out how to accomplish same task.

Welcome to the HP User Community.
How-to
Unless things have changed, HP app does not support 2-sided scan the way this feature is supported in HP Scan (part of the Full Feature Software).
If you cannot (or do not wish to) use HP Scan,
If you use the flatbed and scan one page at a time,
Open HP app> scan > flip page > use + Add Page > repeat for each page in the document
OR
HP app can be used to scan the content with the ADF
Scan pages >
Flip stack and Scan >
Manually reorder the pages before the document is saved / shared
