Hi Egg-gineer,
Thank you for the update.
I have a couple more questions if you don’t mind. When did you last update the iOS on the iPad? Is that the same time this issue started? I know you said that you had automatic updates turned on, I’m just hoping that you might remember when the update occurred.
I’m hoping to get enough information so we can mimic your settings to try and recreate this AirPrint issue.

The fix is to turn off double-sided printing in the options when you are about to print a document and then turn it on again.
After doing this just once, anything printed double-sided will be long-edged printed not short-edge.
It's not a toggle, I can't get my iPad to print double-sided on the short edge now (not that I want to), for some reason once you've turned double-sided printing off and on again, long-sided becomes the permanent default.
Weird!
P.S. It fixes it for all apps.
