HP Recommended
Product: Office Jet Pro 6978
Operating System: macOS 10.12 Sierra

Seems that my printer has default duplex printing.  It's kind of a hassle to remember to change it each time I print.  How do I change the default?\

Try going into cups and modifying default printer settings.
Run "cupsctl Webinterface=yes" from terminal. Then go to 127.0.0.1:631 on your browser. Should be able to find your printer there and modify default settings
