Options depend on the application you are using to Scan.

If you are not getting the results you want, you may need a shortcut that provides the settings.
According to the Help document on the subject, you can create a Shortcut using the Full Feature Software on the computer that will also transfer that shortcut to the printer panel.

Full Feature Software:

- Install the Full Feature Software
- Open the Printer Assitant shortcut icon on the Desktop > select Scan a Document or Photo
