Hi,
The Officejet Pro 8600 do have OCR integrated within the HP Scan Software for your product.
From the following document select the How to scan with HP software section and then follow the How to scan as editable text (OCR) section:

If you do not see such an options exists, run the installation program and click the Add More Software option, then ensure the Read Iris OCR option is installed as part of your HP Printer software.
