Just for kicks, I again tried the steps outlined by infantErubanA (thinking maybe something had changed) in a security update. Sadly, his suggestion simply does not enable Scanning to a Network Folder on my system. If it works on infantErubanA's Mac OS 10.10 system, it would be interesting to learn in what ways our computer systems or printers differ.

I agree. Eruban has nicely reiterated the instructions for setting up Scan to Network Folder for an SMB-2 supported operating system, such as OS X 10.9 or below. However, it does not and will not work for OS X 10.10 Yosemite unless and until the printer's firmware is updated to support the SMB-3 Yosemite uses.
Based upon the thread and my own extensive experimentation, I believe there are three practical solutions:
1. Don't upgrade to Yosemite, or at least keep a spare disk or disk partition with OS X 10.9 or below installed. Then you can dual-boot into an SMB-2 supporting Mac OS version.
2. Install Yosemite and run OS X 10.9 or below on a virtual machine such as Parallels. I documented that several replies back. You have to set up bridged networking, not shared networking, so your VM has its own IP address and SMB-2 enabled network presence.
3. Attach a shared disk--even a cheap USB stick--to a router (such as Apple's Time Capsules) that supports USB-2. This is very cheap but adds the step of having to copy the files from the USB stick periodically.
I use option #2 because I want all my scanned files to land immediately in a central scan repository on my HDD. My HDD is multiply, redudantly backed up, whereas I suppose a USB stick could silently fail. Option 2 avoids rebooting but requires a Parallels start or resume from suspended state. Option 3 is the fastest to finish scanning because nothing needs to be booted or restarted from suspense. However the scan files don't land at their final destination; you have to copy them there afterwards.

Your steps are 100% accurate and 100% wrong for Mac OS 10.10.3 - Yosemite changed the SMB protocol. Until HP changes their firmware to support the new MacOS SMB changes - these steps simply won't resolve the issue.

I have good news to report.
HP has released firmware version 1502 for the Officejet Pro X476/X576 in May of 2015. I have loaded this version on my two X576 printers.
The release notes for this version state "Scan to Network Folder: Issue resolved with OS X 10.8, 10.9, and 10.10".
At first, it appeared that the SMB3 problem was not fixed, because after updating, the printer still said it could not connect to my Mac.
However, I went into the web interface for the printer and edited the Scan To Network Folder preferences. I just retyped the password and hit save, and much to my surprise and excitement, it started working!
Just to reiterate, I am running Yosemite 10.10.3 and HP firmware 1502, and I can hit the "Scan to Network Folder" button on the printer and it will scan the document and place the result on the desktop of my computer.
Yea!

I've struggled with this issue since buying an OfficeJet Pro 8620 last month. HP Support could not assist after 2 hours of back & forth and promised a call back from the technical team - which never came.
I downloaded and installed the latest HP update available - Version 3.1 - via the App Store, more in hope than anything else.
I deleted all my five previous unsuccessful attempts at setting up a network folder in HP Utility and started again. I'm not particularly IT literate, but in the network path box I pointed directly to my Airport Extreme router IP address, followed by the full file path to my HP Scanned Docs folder.
Saved & tested yet again, expecting the usual error messgae, but had a successful set up result. Just tested the Scan to Network Folder from the printer and it works.
Finally.
Can't believe it's anything enlightening I've done, so HP may well have corrected the issue in this last update (at least for the 8620 machine).

HP app from the Apple Store actually works for scanning to computer. Your are able to choose a specific folder for scanned documentation.
I never even knew about that app until I read the last post.
