I just upgraded to a new Mac running MacOS 12.0.1 (Catalina). I can print just fine to my HP Officejet 8600 Pro, so I know it is connected. I can also print and scan from my old computer running MacOS 11.6 (Big Sur). But when I open HP Easy Scan on my new computer, it does not detect any scanners. None of the troubleshooting steps on the HP web site work. Any suggestions would be appreciated!

Try the below suggestions -
Try updating mac and printer firmware
To update the printer's firmware, refer - HP Printers - Updating or Upgrading Printer Firmware
To update Mac, try these steps - How to update the software on your Mac
Uninstall HP Easy Start
- Click on Spotlight icon and type HP Uninstaller or by opening HP Easy Start.
- Click on Continue to uninstall the software.
- When prompted for Password, type in your system password
- You can also uninstall by opening HP Easy Start.
Download HP Easy Start and install the printer.
- Download HP Easy Start and follow the on-screen to complete the installation.
If the issue persists, install the HP Smart App from the App Store.
You may also add the AirPrint printer to the Mac printer queue
Add the Air Print printer to the Mac printer queue
Confirm you are using Air Print by adding the printer in System Preferences.
- Click the Apple menu, click System Preferences, and then click Print & Scan or Printers & Scanners.
- Check if your printer name displays in the Printers list, and then do one of the following steps.
- If your printer is listed, remove and re-add the printer to confirm it is set up for Air Print. Click the printer name, click the minus sign "-" to delete the printer, click the plus sign "+"click Add Printer or Scanner, click the printer name and then continue to the next step.
- If your printer is not listed, click the plus sign, click Add Printer or Scanner, click the name of your printer, and then continue to the next step.
- Confirm Air Print or Secure Air Print displays in the Use or Print Using menu, and then click Add.
- Open a document or photo, click File, and then click Print.
And try and scan using Image Capture.

I can scan using HP Smart but I don't like that app because it is very slow. It acts as if it is a dial up based internet app. I have the latest Macbook Pro, and it has the latest operating system.
I am POSITIVE that you app HP Easy Scan is just not updated to work with this operating system. I am seeing posts from other users using newer technology reporting the same issues.

We have tried all the troubleshooting steps from our end, I think this issue needs some additional technical assistance that can be better provided through one-on-one interaction or a remote session with our HP Support team.

This is rather nonsense. HP smart has almost none of the features of HP easy scan, most notable OCR (a critical feature in my scans) and various presets which are simply not available in HP smart.
I have just got a Montgomery and having the same issue in that the easy scan won't recognise the printer/scanner, whilst other software does including the OS itself.
Sorry your "solutions" are not acceptable by stating you should use a crippled featureless replacement? How is that appropriate?
If you wish to replace the software that's fine, but you have to AT LEAST PROVIDE THE SAME FEATURE SET. NOT LESS.
