So in desperation I had exchanged my laptop out from where I bought it for the same model since I was still within the return period. First thing I did after I set Windows up was plug in the G5 and it worked flawlessly. Of course as soon as I updated everything it no longer worked. I kept all the security updates but reverted the intel/nvidia graphics drivers back to these versions and I'm up and running again:

windows 10: 2004 19041.488

intel: 27.20.100.8280 May 19, 2020

nvidia: 26.21.14.4276 March 15, 2020

I hope that helps somebody because this sure is frustrating for a brand new laptop with a G5 dock to match.
