After hours of trying to get "Scan to Folder" set up on more than one occasion, Rhough33's suggestion got me on the right track.  I tried adding  "Jane's-MacBook-Pro.local" at the beginning of the path but I still got an error message, this time saying it could not find the remote server and to try using IP adress.  When I put my IP address at the beginning instead, it worked!

So what I entered for the path was:    \\(my IP address)\Macintosh HD\Users\(username)\Documents\My Scans

By the way I have an HP MFP M281cdw.
