Thank you for posting your query.
Please follow the steps provided below to download the firmware version for the Poly BT700.
1. Please go to Poly Lens and log in to it.
2. Then click on "Manage," then select "Software Versions."
3. Please search for the required headset in the search bar and download the required firmware version.
4. Once done, please go back to Poly Lens and update the firmware using the custom firmware option.

The Dongle updated with the solution - worked great- Thank you - but trying to update the Voyager 5200 in the same method and it doesn't work and says simply Voyager 5200 Series update failed. Anything else I can try?

Could you please try downloading the previous firmware version to check if the headset firmware is getting updated? Otherwise, please try downloading the firmware version on a different PC and check if it helps in resolving the issue.
