Transpalette, for you I recommend to keep experimenting as you wish and add in a second Westermere (Intel Xeon 5600 series) processor identical to the one you already are using in your version 1 motherboard (which is HP certified for the 5500 series processors, not the 5600). Please let us know what you find.
For others who want added information on this issue and why I recommend following HP certification standards of not using the 5600 series processors in a version 1 Z600 workstation:
1. The HP workstation engineer Dan_in_WGBU specifically stated in this forum that you might get a 5600 series processor to work in a version 1 Z400/Z600/Z600 but that instability was to be expected. I searched through my home digital records but cannot find a PDF version of Dan's post. Some other person might wish to search more via Google. Many of our and Dan's posts from the past are archived and not found via this forum's search engine. Google can find archived forum posts that we can't find here on the forum via the internal search engine.
2. A main change from the version 1 to version 2 workstations was the upgrade from the B3 stepping of the Intel 5520 Tylersberg chipset to the newer C2 stepping. When the version 2 motherboards for the Z400/Z600/Z800 came out there was a HP "System Board Roll" support communication document, and main "reason for change" listed was to "Upgrade PCA to allow for Westmere processor support". The Westmere processors are the 5600 series, and full support for them only came with this hardware change. Only then did the QuickSpecs for these workstations start showing support for those later better processors. You can tell the PCA version inside the 5520 chipset chip via HP motherboard probing software as stated in this HP comment: "HP Performance Advisor SW can be used to determine the PCA ID, which is reported by Performance Advisor under "System Configuration" and "Baseboard ID". All B3-based systems will have the ID "0AE8h" and all C2-based systems will have the ID "0B54h"." Note that this is only one of the hardware changes made during the version 1 to version 2 upgrade.
3. Take a look at this link in the Spiceworks forum which shows a user wanting enterprise level reliability but using multiple non-HP certified parts and paying the price:

5. From my Z600 System Board Roll PDF (HP Document ID c01982145) here is the quote on the change of the Assembly Part Number to the -003 version I posted about in a post above if you want to get a version 2 Z600 motherboard: "Roll system board Assembly Number from: 460840-001 or 460840-002, to: 460840-003"
