How to override expired cartridge message for HP T610 ?

You cant override it, information of expiration date and ink level is stored on an integrated circuit ( chip) on the cartridge, the printer reads information from that chip. You can try to find aftermarket chip and replace, that is one solution.

Logically if I replace the cartridge with new one it will work!

Yes, the expiration date is on the back side of the box ( and on print cartridge also) check for newly purchased ink it must be at least 12-18 month before the expiration date, don't buy one that will expire in like 2 months.
