UEFI boot order (how to configure new 960 EVO SSD as primary boot)

Hello. I am looking for some guidance on UEFI settings so that my new SSD drive will be primary boot disk vs the 1TB (very slow) HDD that came pre-installed.  I intend to keep the old 1TB drive for storage and non-windows applications.

+ I have installed my new Samsung SSD NVMe drive via PCIe adapter, 

+   have also purchased Paragon Migrate OS to SSD 5.0 software for the purpose of automatically migrating all of the Windows OS data/partitions from the 1TB HDD which came with this desktop to the newly installed SSD drive, 

+   have made a recovery USB file (via HP Support software on this machine),

+   but have not yet kicked off the Windows OS migration just yet because I am running into issues with the UEFI bios.

When I enter <F10> loading the UEFI bios (American Megatrends 6.4.2.10 for HP. AMI F.14, 5/22/2017), I can see both my old HDD and my new SSD, however, the boot order does not give me the option to change to the new SSD. I even tried disabling boot secure and enabling legacy.

However, my Storage > Boot Order options are as follows:

(with legacy boot sources disabled)
1. Windows Boot Manager                             <----(WTH is this!?)
2. USB Floppy/CD
3. USB Hard Drive                                              <----(Not sure what this is. I have SATA HDD and M.2 SSD)
4. ATAPI CD/DVD Drive
5. UEFI: IPv4 Realtek PCIe GBE                    <-----(Could this be my M.2 SSD?)
6. UEFI: IPv6 Realtek PCIe GBE

(with Legacy Boot sources enabled)
no additional options

When I click on Storage > Device Configuration, I see the following:
Hard Disk
1. SATA0 1.0 TB, WDCWD10EZEX-60WN4A0
2. M.2 250.0 GB, Samsung SSD 960 EVO
CD-ROM
1. SATA3 hpHLDS...

So, UEFI sees the new Samsung SSD, but I cannot add this into the boot order.
My goal is to do paragon Windows OS files migration to SDD, change boot order to SDD first, then start.

Why is the UEFI not seeing the SSD for boot order options? Is it because I have not migrate Win OS data / partitions to the SSD yet?

As a follow up, I fixed this in a different way..

Apparently, the new Windows 1703 build causes problems for the 3rd party (Paragon) disk copy tool I was using.

These steps worked:

1. Removed power cable from 1TB HDD

2. Power down

3. Insert HP Recovery into USB 3.0 slot

4. Power on (bios chose to boot from SSD on its own)

5. Went through all the recovery steps

6. Connected Power cable to 1TB HDD

7. Updated drivers and reformatted HDD
