I have an Omen desktop 880-022na with W10 64 bit; Intel(R) Core(TM) i7-7700 CPU @ 3.60GHz; 16GB memory; NVIDIA GeForce GTX 1070; 60Hz 2560 x 1440 MONITOR; .
It performs reasonably well but it’s a few years old now.
I want to run some newer games (Elden Ring / GTA (next release) etc) preferably at max or very high FPS as well as high quality.
It’s not an option for me to replace the whole PC so I would like your advice as to which components will have the biggest impact if I upgrade them.
Graphics card? CPU? Memory?

@Kewlers , welcome to the Community.
Here are the Product Specifications for your computer. If you look at the section titled "Processor/Processor upgrade information" you will see that you have the most powerful processor that is compatible with the motherboard. Also, if you look at the section titled "Memory/Memory upgrade information" you will find all of the necessary specifications. The motherboard supports up to 32 GB of memory. Since the motherboard supports Dual channel memory architecture it is best to install the modules in matching pairs. Here is a HP Knowledge Base article that will tell you what to consider when upgrading a processor or memory.
Here is a HP Knowledge Base article that will tell you what to consider when adding or upgrading a video card. Read it carefully and you should be able to chose a good upgrade.

I fully accept telling me to do my own research and make my own decisions is a fair response 😉
The articles you referenced were very helpful.
I concluded with no options on CPU and probably minimal impact of Memory upgrade, my only option is to look at the video card - no great surprise I guess.
One of the articles helpfully pointed out the need to align the PSU with power-hungry components like video cards and this revealed that to get a step up in video card performance would also need a new PSU.
I'm going to consider the options and costs before moving on.
