Hi, I currently have the hp z240 it currently has a i7 6700k installed in it, what is the best CPU that I can install into the motherboard that the bios will allow?
Will it support 7th gen intel CPUs?

Well, you have come to the right place: I just completed my HP Z240 SFF Upgrade project: Solved: Upgrading HP Z240 Desktop Workstation SFF - HP Support Community - 8427878, and here (#1 in UserBenchMark): HP Z240 SFF Workstation Performance Results - UserBenchmark:
Yes, the HP Z240 platforms are compatible with Intel 7th gen processors. In short, the best processors money-for-value-for performance you can fit in your HP Z240 SFF/MT would be the i7-7700 (TDP 65 watt) or i7-7700K (TDP 91 watt). The latter produces more heat, so if you have an HP Z240 SFF, you will need to modify (add) internal air cooling as explained in my first link. In my opinion, recently both the i7-7700 and i7-7700K are reasonably priced via eBay.
Then there are the compatible 7th gen Xeon processors such as the high-end E3-1280 v6 which I installed, but they are pricey.
