I have a Pavillion desktop gaming machine (690-0073w) and it has a 256GB M2 SSD drive installed on the motherboard. Are there any limitations to the size of of a new larger drive that can be installed in place of the stock 256GB one currently in the machine?

There are no real limitations to what size M.2 NVMe SSD you could fit in your HP Pavilion 690-0073w, except how much money you are willing to spend. Meaning, a 2TB M.2 NVMe SSD drive-size is pretty much the $-limit what most gamers would fit beyond the more or less standard 1TB size.

Okay...thanks for the input on this. I'll probably be going with a 1TB drive as that the larger ones are a little out of my price range. I can just clone the existing drive onto the new one and then swap them out and I'll have all my stuff intact too...which is great as that I've always disliked having to re-install all the drivers and what not.

You are correct: clone your 256GB M.2 NVMe SSD -as I presumed that was your primary (boot) drive to a quality 1TB drive.
Recommended examples priced competitively, IMO, right now:
Crucial P3 Plus 1TB PCIe 4.0 3D NAND NVMe M.2 SSD, up to 5,000 MB/s ($90): https://www.amazon.com/Crucial-Plus-PCIe-NAND-5000MB/dp/B0B25NXWC7/ref=sr_1_5?crid=7E0Y2AUGWU9Q&keyw...
Western Digital BLACK 1TB SN770 NVMe Internal Gaming SSD - Gen4 PCIe, M.2 2280, Up to 5,150 MB/s ($98): https://www.amazon.com/WD_BLACK-SN770-Internal-Gaming-Solid/dp/B09QV692XY/ref=sr_1_13?crid=7E0Y2AUGW...
Samsung 970 Evo PLUS M.2 NVMe PCIe 1TB SSD ($98): Amazon.com: Samsung 970 EVO Plus SSD 1TB NVMe M.2 Internal Solid State Hard Drive w/ V-NAND Technolo.... You will get read speeds up to 3,500 MB/s and write speeds up to 3,300 MB/s.
However, if you want to spend a lot less ($56) on a 1TB M.2 NVMe SSD, the Silicon Power Model A60 M.2 NVMe PCIe 1TB SSD (p/n: SP001TBP34A60M28) would be a great alternative, that is, if you are OK with lower read speeds (up to 2,200 MB/s) and write speeds (up to 1,600 MB/s), as seen here, for example: Amazon.com: Silicon Power 1TB - NVMe M.2 PCIe Gen3x4 2280 SSD (SP001TBP34A60M28) : Electronics.
Hope this was helpful.
