Will this RAM (Kingston Fury Beast 16GB (2 x 8GB) DDR4 3600MHz Dual Memory Kit KF436C17BBK2/16) work with my desktop (HP Pavilion 595-p1009) which has a Lincs 843b Motherboard. I have been looking everywhere, but I do not want to get the wrong RAM and end up with something that does not work.

Your HP Pavilion 595-P1009 (5QA75AA) fitted with a Lincs motherboard with SSID: 843B as referenced, can be fitted with up to 2 x 32GB of DDR4 PC4-21300, 2666 MHz, Non-ECC, Unbuffered, UDIMM, 288-pin RAM sticks.
When we look at similar HP Pavilion 595-pxxxx desktop performance benchmarks fitted with the HP Lincs 843B motherboard here: https://www.userbenchmark.com/System/HP-Pavilion-Desktop-595-p0xxx/91874, we see the same recurrent pattern of down throttled fancy gaming RAM on your desktop as we have seen on other HP computers.
For example:
Corsair Vengeance LPX DDR4 3200 C16 2x8GB at 2133 MHz.
Corsair Vengeance LPX DDR4 3000 C15 2x8GB at 2133 MHz.
Corsair Vengeance LPX DDR4 2666 C16 2x8GB at 2133 MHz.
G.SKILL Ripjaws V DDR4 2400 C15 2x8GB at 2133 MHz.
Kingston HyperX DDR4 3466 C16 2x16GB at 2400 MHz.
With one exception: HyperX Fury 2666 C16 2x8GB (p/n: HX426C16FB3/8) at 2666 MHz.
Overall, here are the RAM showing the best (highest) RAM performances (at 2666 MHz) on your platform:
Samsung M378A1K43CB2-CTD 2x8GB
Crucial BLS8G4D30AESBK.M8FE 2x8GB
Samsung M378A1G43TB1-CTD 2x8GB
Micron 16ATF2G64AZ-2G6J1 2x16GB
This list is incomplete, but you got the idea. My recommendation: avoid "fancy" RAM on this platform. You're going to save money too.

Can you provide links for the RAM you listed that are Canadian. I could not locate the exact RAM, and the prices were higher than the one I listed. So the RAM I listed, is it compatible with the PC? The RAM I listed is on sale for $60.

The RAM you listed is compatible with your desktop. Its SPD (default speed) is set at 2400 MHz, so that is not bad at all, especially if you can get the Kingston Fury 2 x 8GB RAM kit for $60 -that changes the equation, IMO:

Does the PC also have to support XMP profiles in order to use XMP profiles? If so, it says "XMP Profile #2" is 3000mhz; will I be able to change it from 3000mhz to 2666mhz?
What's better, 1x8GB 2666mhz DDR4 or 2x8GB 2400mhz DDR4? Performance wise, will I be able to see a recognizable difference is games?

Based on the RAM speed performance of most of the fancy gaming RAM I pointed out, it does not appear that you will have access to use XMP profiles, that's why I outlined the 2400 MHz (default speed) as the fastest this RAM will perform in an HP Pavilion 595-P1009.
I doubt that you'll see/detect any gaming performance difference between 2666 MHz and 2400 MHz RAM. To be clear: or did you mean 1Rx8 (single-rank) 2666 MHz vs. 2Rx8 (dual-rank) 2400 RAM? -No, I don't think there would be much discernable performance difference either.
If you are referring to the latter, please note that you shouldn't -well, it is recommended not to mix 1Rx8 and 2Rx8 RAM.

I was looking around and found another RAM (Patriot Viper Elite II DDR4 16GB(2 x 8GB) 2666MHz Memory Kit). I found this listed at $51.99 and it also is 2666mhz. This will be compatible right as it meets all criteria.

This RAM looks good: "Base Frequency: PC4-21300 (2666MHz)", so it should run at 2666 MHz, which is the fastest RAM speed your desktop can run.
