Hi, I have an HP Pavilion with i3-7100T processor which is unable to accept Windows 11 as the processor is not on the supported hardware list. I would like to upgrade this processor to a Windows 11-supporting CPU. What options do I have if any?

You're very welcome.
I am currently having great difficulty accessing any of the HP support pages, so I had to be creative.
Below is the link to the parts list for your AIO PC.
It comes with the Palau-UF motherboard.
When I look up the specs for the motherboard, none of the pages work.
I was able to access the cached page at the link below and it provides the processor upgrade spes.
HP Desktop PCs - Motherboard Specifications, Palau-UF | HP® Customer Support (bingj.com)
Processor upgrade information
- TDP: 35 W
- Socket type: LGA 1151
- Motherboard supports the following processor upgrades:ProcessorTDPIntegrated GraphicsIntel Core i7-7700T (Kabylake) 2.9 GHz Quad Core35 WIntel HD Graphics 630Intel Core i5-7400T (Kabylake) 2.4 GHz Quad Core35 WIntel HD Graphics 630Intel Core i3-7100T (Kabylake) 3.4 GHz Dual Core35 WIntel HD Graphics 630Intel Pentium G4560T (Kabylake) 2.9 GHz Dual Core35 WIntel HD Graphics 610
As I suspected, there are no processors you can upgrade to that meet Microsoft's minimum W11 hardware requirements.
Using the method I posted, I have upgraded a Dell PC with an Intel i7-7700 processor to W11 and it works just fine.
I would assume it would also work fine on your PC as well.
You can always easily go back to W10 within 10 days of upgrading as long as you don't delete any of the upgrade files or the Windows.old folder.

Hi:
Since you didn't provide the model number of your PC, it would not be possible to provide what your PC motherboard's processor upgrade options are.
However, most likely it will not support the Intel 8th gen core processors.
If you are interested in installing W11 on your PC as is, you can read this discussion for how I upgraded several HP and Dell notebook and desktop PC's that did not meet the W11 hardware requirements to W11 22H2/22H3.
You have to use the version of the Rufus utility that I zipped up and attached in the discussion (v3.18).

If the in-place upgrade fails, you should be able to clean install W11 using the bootable W11 installation flash drive you made with Rufus.

Hi Paul, One additional thought. I am getting a good rate for a used Intel Core i7-8700K i7 8700K 3.7 GHz Six-Core Twelve-Thread CPU Processor 12M 95W LGA 1151. Will this be a good fit for my computer in your opinion.
Additionally, will OEM Heat sink be able to cool this suggested CPU.
