Hello,
I have 2 sticks of Corsair Vengence LPX 16GB 2666MHz:
This screenshot shows 1067MHz is the highest clockspeed without XMP, which matches the 2133(4)MHz that Task Manager shows:
So yes it looks like it is caused by the type of RAM I have installed.

Which low-profile RAM would you recommend to unlock the 2666MHz clockspeed?
And is there anything else I could do to optimise my system and up the userbenchmark score? other than upgrading the CPU cooler.

Yes, it is the doggone Corsair Vengeance (p/n: Corsair CMK32GX4M2A2666C16) RAM's "SPD" (default) speed setting all right:
Link: VENGEANCE® LPX 32GB (2 x 16GB) DDR4 DRAM 2666MHz C16 Memory Kit - Black (corsair.com).
For 16GB RAM modules I would recommend:
Timetec: "Timetec 32GB KIT(2x16GB) DDR4 3200MHz (or 2933MHz or 2666MHz) PC4-25600 CL22 1.2V Non-ECC Unbuffered 2Rx8 Dual Rank 288 Pin" as seen here, for example: Timetec 32GB KIT(2x16GB) DDR4 3200MHz (or 2933MHz or 2666MHz) PC4-25600 CL22 1.2V Non-ECC Unbuffered.... Hello,
A very informative video you provided, thank you.
I will be sure to change what I haven’t already. I’ve already tried to optimise windows by changing a few things like the power settings and performance options.
Is there anything else I can do to increase the performance of my CPU? While in game the CPU clock speed sits at around 4.4-4.6 GHz. Is this normal? The max boost is shown on the box as 4.9-5GHz. I would assume I’m thermally limited, but I am unsure.

When you go to the first page of this discussion thread, you'll see that I had a similar question. In short, yes, your observed 4.4-4.6 GHz processor speed is most likely linked to thermal throttling.
If you don't mind, please download/install/run the freeware Intel's Processor Diagnostic Tool (IPDT), as can be found here: https://www.intel.com/content/www/us/en/download/15951/intel-processor-diagnostic-tool.html.
Also, if you haven't already done so, download/install/run the most useful freeware utility program "Speccy" at the same time you run IPDT: https://www.ccleaner.com/speccy/download/standard. Choose the "CPU" tab:
What I would like you to do is to watch the 8 Cores temps (see left side of picture) very carefully when you run the IPDT. In my case, the Cores temps are highest when it runs the "Math" test module: my temps reach 87~88°C. If yours go higher than that, you really need to increase your desktop's air flow, specifically through your CPU heatsink. The "IPDT's "Measured frequency" should be close to 3.60 GHz. Also, make sure you have enabled virtualization and hyperthreading in BIOS.
