Hi I have the following PC and looking to see what my options are to upgrade my PSU? Looking for something over 600W to be able to handle a RTX 3060 graphics card.

Thank you: your HP Pavilion Desktop TP01-2007a PC (519J8PA), according to: https://support.hp.com/in-en/document/c07925083, and: https://support.hp.com/in-en/document/c07119829, is fitted with the Stark motherboard (SSID: 8860), and a 350-watt proprietary HP power supply.
You asked for a 600+ watt power supply, but I don't think HP has manufactured such a power supply.
The best I could find for your desktop is a 400-watt PSU, with HP p/n: L69242-800, and (possibly) a 500-watt PSU with HP p/n: L05757-800. Please note: the latter power supply is larger than the 400-watt PSU, and won't fit as "cleanly" as your original PSU. Documentation is challenging to find, and mostly from secondary (User) sources, such as this one: Power Supply Cross Reference for specific models - HP Support Community - 7483923.
There is, however, an alternative way [off the HP reservation] to provide all the power your high(er)-end graphics card needs, and that is by using an ATX 24-Pin Power Supply Adapter:
This method will allow you to sync aka "daisy chain" an external, secondary power supply to your motherboard, like I did with my HP EliteDesk 800 G3 SFF (now upgraded with a G5 motherboard) as seen here: https://h30434.www3.hp.com/t5/Business-PCs-Workstations-and-Point-of-Sale-Systems/Upgrading-HP-Elite..., where my secondary power supply is dedicated to power an external RTX 3080 12GB graphics card, whereas an HP 250-watt power supply powers everything else. Since your desktop has more room than my SFF, it is likely that you can fit a high(er)-end graphics card inside your case.
