From its specs
https://support.hp.com/au-en/document/c03808397#AbT3
You can use video cards which are mentioned on the above specs. Please do not use other cards they may NOT physically fit or won't support at all, specially power.
Regards.

Welcome to our HP User Forum!
You can upgrade your GPU on an HP EliteDesk 800 G1 USDT, by using its "MXM" graphics card slot. The best compatible MXM graphics card for this desktop, as I found them online, would be an HP GeForce GTX 1050 Ti 4GB MXM 3.0, as seen in this User benchmark: HP EliteDesk 800 G1 USDT Performance Results - UserBenchmark. The challenge is that this particular MXM card is very expensive (see: NEW For Dell Hp GeForce GTX 1050Ti 4GB MXM3.0 Tybe-A Video Graphics Card GPU N17P-G1-A1 Tested OK Fr...), and requires a heatsink, and also possibly requires a USDT power supply upgrade because this graphics card has a 75-watt TDP (SK1050 | NVIDIA GTX1050Ti MXM 3.1 Graphics Module | PERFECTRON).
So, your best bet would be a Nvidia Quadro M2000M 4GB, such as seen here: Quadro M2000M M2000 GDDR5 4GB Video Graphics Card N16P-Q3-A2 With X-Bracket For HP ZBook15 G3 / 17 G..., which also requires a (passive cooling) heatsink -which looks like this:
But they are also difficult to get. You could make a heatsink in your spare time if your DIY/technical skills are slightly above average: MXM graphics card upgrade (heatsink) (katsbits.com).
Or you can go where few have gone before, as I showed (proof of concept) in my HP Elite 8300 USDT upgrade project: Solved: Upgrading HP Compaq Elite 8300 USDT - Page 2 - HP Support Community - 8118827. Not particularly recommended, as the money I spend on this project could have easily bought a new PC.
Anyway, I digressed. Point is, there aren't really any useful MXM graphics card options for your USDT other than for very basic gaming based on performance.
Hope this was helpful.

Hi NonSequitur777. I've been tinkering and digging for the past couple of weeks and had read elsewhere that the M2000M would be a good candidate for the 800 G1 USDT. I purchased one from eBay, have a 230W power supply, fashioned a heatsink with fan from an old ATI card, and I can boot. I also see the card in Device Manager, but I have a "Code 31" error. I've tried loading drivers, the NVidia GeForce Experience application detects and downloads the driver, but fails on install claiming that it isn't compatible with that version of windows. I have also tried to manually select and download drivers, where the same error is thrown along with one that basically says that card isn't supported. Is this a VBIOS problem?
I also cannot boot to CMOS settings with the card installed. Just a blank screen. Ideas on what VBIOS to try and/or where to get it is much appreciated. I figured I would ask since this looks to be a rather recent response.
Thanks.

Welcome to our HP User Forum!
An M2000M should definitely be compatible with your HP EliteDesk 800 G1 USDT, as it shows up a number of times in the Top Ten of "HP System EliteDesk 800 G1 USDT" UserBenchMark performance scores: UserBenchmark: HP EliteDesk 800 G1 USDT Compatible Components.
First thing I noticed is that all the M2000M cards were installed in systems running Windows 10 (specifically with BIOS Date: 20200220).
Secondly, Error Code 31 in a HP device usually indicates that Windows has encountered a problem with the device's driver.
Are you perchance running your USDT with Windows 7? If this is the case, then the fix could be easy: upgrade to Windows 10.
Assuming you are running W10, what I would do is what you tried to do: trying out different drivers.
Disclaimer: the following suggestions are a bit off the Reservation, so to speak. Apply at your own risk/volition. But that is what I would do:
Perhaps you haven't tried any of these driver options yet: Nvidia Quadro M1000M/ M2000M / M3000M / M4000M / M5000M Graphics Driver | Driver Details | Dell US or: Driver for nVidia Quadro M2000M and Windows 10 64bit (nv-drivers.eu).
It's worth a try, in my opinion.
Hope this was helpful.
