Welcome to our HP Community forum!
Your HP EliteOne 800 G2 23-in Non-Touch AIO or Touch AIO can be upgraded with up to 2x16GB DDR4 PC4-17000, 2133 MHz, Non-ECC, 1.2V, SODIMM RAM sticks, as this 800 G2 AIO user with 2x16GB Samsung M471A2K43BB1-CPB shows: https://www.userbenchmark.com/UserRun/50180531.
The point is this: preferably use a matching 2x16GB DDR4 2133 MHz SODIMM RAM kit (same brand and model), and you should be good to go.
Kind Regards,
